Jan's first Culinary Competition

All Junior Chef's were happy with their first life entree Chef Competition at the Dolmen Hotel  

achieving various medals. 



























2 Dishes Jan Pace presented were: 




Ballontine leg of rabbit

stuffed with sun dried tomato & black olive tapenade, bed of herb gnocchi, rocket & Mediterranean veg , surrounded with red wine jus, natal and pea coulis





Trio of


Berry, ginger mascarpone mille folie


Passion fruit, orange muscat jelly 


Hot custard cinnamon crumble 


Sesame seed Tuile
